Veggie Fajitas in Under 45 Minutes

You will need veggie patties, an onion, bell peppers, garlic, Mexican seasoning, and oil for sauteing.

Slice the peppers and onions. Peel, mince garlic.

Brown the veggie patties. Slice each into strips.

Heat butter or oil on medium-high heat. Add minced garlic, heat for 30 seconds. Add onion and peppers, saute until vegetables are crisp tender.

Add veggie patty slices. Top with seasoning. Gently toss all and heat throughout. Turn off the burner. Squeeze the juice of half a lime over all ingredients.

Double up heated shells. Spoon hot mixture into shells. Top with salsa, sour cream, avocado slices. Serve immediately.

Quick Veggie Fajitas (Serves 4*)

Ingredients

For the Filling

4 veggie burger patties (any brand)
2 bell peppers
1 medium to large onion
1 clove fresh garlic, minced
2 T butter or grapeseed oil, for sauteing
1 T Your favorite Mexican seasoning
1 lime
1 package small white or yellow corn tortillas

Garnish (optional)

Salsa
Sour cream
Avocado slices
Coarsely chopped fresh cilantro
Lime wedges

Directions:

  1. Wrap 8 – 12 tortillas loosely in foil and heat in oven at 225 degrees F.
  2. Brown the veggie burgers. This can be done quickly in a nonstick skillet or in the toaster.
  3. Slice the bell peppers, onion, and browned veggie patties.
  4. Slice the lime in half. Set aside.  
  5. Heat oil over medium-high heat in a skillet.  
  6. Saute garlic for 30 seconds.
  7. Add the sliced peppers and onions. Saute, stirring regularly until they are crisp-tender.
  8. Add the veggie patty slices. Gently mix in and cook 3-5 minutes, or until all is heated throughout. Turn off the burner.  
  9. Add Mexican seasoning and gently toss.
  10. Squeeze lime juice over all ingredients.  
  11. Remove heated tortillas from the oven.
  12. Divide filling by the number of servings.
  13. Spoon filling into two doubled-up shells for each serving.
  14. Top each to taste with salsa, sour cream, juice from remaining half of lime.

* The best thing about this recipe is that it can be adapted. If you are cooking for one, just use one veggie patty, half a bell pepper and one-quarter to one-half onion and one-fourth of all of the other ingredients.
